Our Beef
We have a full range of beef cuts available.
The wonderful, complex beef flavor that makes Belted Galloways famous is underpinned by three main factors:
- Firstly, they are a slower growing cattle breed, so we select for slaughter at about 2½ years old, which is a year older than most commercially-reared beef.
- Secondly, they are excellent grazers, happy to graze in hedgerows and on a wide variety of pasture grasses, which adds depth to the beef flavor.
- Thirdly, Belted Galloways are naturally lean, but also have a double coat with a soft underlayer for warmth and a coarse outercoat to keep out the rain and snow. This means that they do not need to build a substantial fat layer under the skin and instead form fat at the intra-muscular and intra-cellular levels. You won’t see the marbling that you’d look for in grain-fed beef, because the fat is distributed throughout the flesh.
They are sent off-site to a small, family-owned abattoir that specializes in humane and respectful treatment of the animals. We have full confidence that their philosophy on animal handling is aligned with our own. The facility is USDA certified and inspected, as is required for retail sale of all meat products. After slaughter, the carcass will hang in their temperature and humidity controlled aging room. We will discuss the state of the carcass with the abattoir during aging, so that we are sure it is processed at the optimal time. This is usually 21 to 28 days. It is then cut and packaged to our (your) specifications. As soon as the cut and packaged beef is ready, we collect and deliver it fresh to you. Any cuts that are not pre-sold are flash frozen and available at your convenience.

Refrigerated
Refrigerated (never frozen) beef is available for pre-order. We will let everyone know a few weeks in advance when we have a new lot of beef coming up, as well as the timing for delivery.
Frozen
We have our full range available at the farm and can arrange for pick-up by appointment or delivery. We have a selection of beef available at our stand at the New Milford Farmers’ Market.
